摘要：本文對白酒中可能存在的外源性有害物無機汙染物——重金屬離子、有機汙染物——農藥殘留、塑化劑等進行了比較全麵的回顧。從目前研究的結果看，重金屬離子汙染問題應該引起足夠的重視，而曾經引起業界和消費者關注的塑化劑問題，應該降溫了。目前在白酒中未見檢測到農藥殘留、苯乙烯、多環芳烴的報道。

Current practice and future trends of exogenous hazardous
compounds in international and domestic liquors

Abstract：Inorganic and organic exogenous hazardous compounds existed in distillates，metal ions，pesticide residues，and phthalates，were reviewed in this study.The recent research results showed the metal ions is the key role among all contaminants in Chinese liquors，and should be caused enough attention by liquormaking industry.While the phthalates problem，focused by liquormaking industry and consumersin these years，would be cooled now.The pesticide residues，styrene，and polycyclic aromatic hydrocarbons（PHAs）were not detected in Chinese liquors recently.

1前言
蒸餾酒中的有毒有害物按來源不同，可以分為兩類：一類是內源性產生的；一類是外源性產生的。外源性有毒有害物是指生產過程中汙染或人為添加的一類物質。這類化合物目前發現得較多，可按化學性質分為無機汙染物和有機汙染物兩大類。為更好地認識白酒可能存在的外源性有毒有害化合物，現回顧總結如下，以期推動釀酒企業對該類化合物的認識。
2無機汙染物
重金屬離子汙染受到諸多因素的影響，包括土壤類型、原料品種、氣候、栽培管理與田間汙染[1，2]。常見的重金屬離子汙染有砷、鎘、鉛等。
